The vinegar is the product. Every bottle in the collection begins with Quebec ice wine vinegar aged in small-format oak barrels sourced from a cooperage in Bromont. The fruit comes from within one hundred kilometres of the kitchen. The oil is always cold-pressed and pressed in the same season.
There are no thickeners, no gums, no emulsifiers beyond what is already in the mustard. Shake before pouring. Refrigerate after opening. Use within six weeks. These are not shelf-stable condiments. They are perishable by design.
